Breakfast Tostada

Do you get sick of the usual standbys for breakfast? We sure do! We love our Mexican dishes at this house, so some leftovers from taco night get turned into a tasty and healthy breakfast.


First, I toast up some tortillas in a little bit of coconut oil.


Next add salsa and cheese.


Then I cook a few eggs sunny side up.


Then add to your tortilla and finish topping with any of your likings. We love fresh tomatoes, avocado, a few glugs of chipotle tabasco, and green onions.


Then bake until the eggs are done and cheese is melted. We love the eggs medium so when you poke into them they are a bit runny.


We love the little bit of heat from the chipotle Tabasco and the creaminess of the avocado. But above all, it cooks up really fast, so you can fill those little grumbly tummies lickity split in the morning.

Breakfast Tostada

Ingredients
Tortillas
Coconut Oil
Eggs
Salsa
Cheese
Any other vegetable and toppings you like!

Pre- heat oven to 350 degrees.
Toast up tortillas in a little bit of coconut oil
Cook eggs as desired.
Assemble tostada with cheese, salsa, eggs, and any other vegetable toppings or meat of your liking.
Bake 10-15 mins until cheese has melted and eggs are cooked to your liking.
